Edamame Hummus
Servings: 1 cups
Ingredients
- 8 oz edamame shelled
- 1/4 cup tahini
- 1/4 cup water
- 1/2 tsp lemon zest
- 3 tbsp lemon juice
- 1 tsp chopped garlic
- 3/4 tsp salt
- 1/2 tsp cumin
- 1/2 tsp coriander
- 3 tbsp olive oil
- 1 tbsp parsley flat leaf, chopped
- crackers or sliced vegetables for serving
Instructions
- Add everything to a food processor and process til smooth- about 30-45 seconds non stop
