Ingredients

  • 8 oz edamame shelled
  • 1/4 cup tahini
  • 1/4 cup water
  • 1/2 tsp lemon zest
  • 3 tbsp lemon juice
  • 1 tsp chopped garlic
  • 3/4 tsp salt
  • 1/2 tsp cumin
  • 1/2 tsp coriander
  • 3 tbsp olive oil
  • 1 tbsp parsley flat leaf, chopped
  • crackers or sliced vegetables for serving

Instructions

  • Add everything to a food processor and process til smooth- about 30-45 seconds non stop
