Easy Weekday Bacon and Egg English Muffin

The key to this is ingredients that require little or no prep or supervision while cooking. With that in mind, this could be done fully in the microwave, but the downside would be a molten egg that needs time to cool.

When done on the stove, there’s free time when the pan is heating, the egg is cooking, and the cheese is melting to carry on with your morning routine while you wait. The cheese needs time to melt on the egg at the end and at the same time the cheese is melting, the egg is cooling to a non mouth blistering temperature, so you can grab the sandwich on the way out the door and begin eating it immediately!

  • 1 large egg
  • salt and pepper
  • 1 english muffin
  • 1 slice cheddar cheese pre sliced for less prep time
  • 1-2 tbsp chipotle aioli
  • 2 strips microwave bacon I promise it's acceptable on a sandwich!
  • 1 tsp butter optionally more for the toast


  • Heat vegetable or another high smoke point oil in a small to medium sized skillet on medium high heat
  • crack the egg into a small bowl, season with salt and pepper and whisk lightly. The egg should be broken, but the whole liquid shouldn't be solid yellow. Just a couple strokes.
  • cut the english muffin in half and toast in a toaster
  • use some of the butter to grease a 3" food ring, once the oil is shimmering
  • Place the food ring in the center of the pan with the remaining butter, reduce heat to medium. Once the butter melts pour the egg into the ring, cover and let cook 2-3 minutes or until desired done-ness.
  • Remove the egg puck to a small place, immediately place the cheese on top and cover to melt the cheese
  • Microwave the bacon per package instructions, spread the top piece of the english muffin with the aioli.
  • place the egg and cheese on the bottom english muffin piece, the bacon on the cheese, then top and enjoy immediately.
