Dill Baked Salmon with Asparagus on Onion Soubise
Granted anything French is gonna sound fancy, but “Soubise”? Holy shit. And the best part is it’s just onions and butter!
Servings: 2 serving
Ingredients
- 2 salmon steaks
- 1/4 tsp salt
- 1/4 tsp pepper
- 1 tsp onion powder
- 1 1/2 tbsps dill fresh , finely chopped
- olive oil
- 1 lb vidalia onion peeled , finely chopped
- 3 tbsps butter
- 3 tbsps red wine vinegar
- 5 u2013 8 asparagus stalks
Instructions
- preheat oven to 400F
- put salmon in a glass baking dish, drizzle with olive oil, then rub on salt, pepper, onion powder and dill
- bake salmon for 25 minutes or until flaky
- in a mixing bowl coat asparagus with salt, olive oil and vinegar, grill to your liking (5 mins per side until grill marks are visible and stalks are floppy)
- in a medium pan, on low melt butter.
- add onions and season with salt, stir to coat. Increase heat to medium-low and cover
- cook onions about 25 mins, stirring occasionally.
- When onions are transparent and mushy, transfer to a food processor and pulse until onions no longer solid.
