Cloud Bread BLT

Ingredients

The Bread

  • 3 large egg
  • 4 1/4 oz light cream cheese (about half a small tub)
  • 1/4 tsp salt
  • 1/2 tsp baking powder
  • 1/2 tbsp phyllium husk powder get it at bulk barn

The Sandwich

  • 1 large tomato firm beefsteak is best
  • 1/2 head green leaf lettuce
  • 1/2 lb bacon cooked
  • 6 tsp mayonnaise

Instructions

  • Preheat oven to 300F
  • Split the egg whites and yolks into 2 mixing bowls, making sure to put the yolks in a large bowl
  • Add the salt to the egg whites and whisk with a hand mixer until the foam is so thick you can turn the bowl upside down and it doesn't move
  • Add the cream cheese, baking powder and phyllium husk to the egg yolks
  • Gently fold the egg whites into the cream cheese mixture until totally combined. The more gentle you are with this process the fluffier your resulting bread will be
  • Cover a baking sheet with parchment paper and portion out 6 evenly sized dollops onto the pan
  • Bake on the middle rack at 300F for 30 minutes or until bread is golden brown.
  • Assemble the sandwiches
