Chorizo and Roasted Cauliflower Hash

here’s a little Portugese butcher / rotisserie chicken type place down the street from me. As long as I’ve lived here I’ve avoided it because it’s always full of surly lookin old Portugese guys.
I finally nutted up and went in and discovered that they sell delicious delicious chorizo. I’ve starting to get bored of the scrambled eggs and ground beef slurry I’ve been calling breakfast for the past couple weeks, so I figured it was time to do something new.
