This recipe is for the salad. Serve it in pocket pitas with cucumbers, radishes, spinach and bean sprouts.

Chickpea Avocado Salad Sandwich

Course: sandwich
Servings: 3 cups

Ingredients

  • 38 oz can chickpeas 2 cans, drained and rinsed
  • 1 large avocado ripe, seeded, peeled
  • 1/4 cup chopped parsley chopped, fresh
  • 1/4 cup lime juice
  • 2 tbsp vegan mayo regular is fine too
  • 2 tbsp dijon mustard
  • 2 tsp chopped garlic
  • 1 tsp hot sauce your choice, optional
  • pita bread or pumpernickel rye for sandwiches
  • cucumbers sliced, for sandwiches
  • radishes sliced, for sandwiches
  • Bean sprouts for sandwiches
  • spinach for sandwiches
  • extra hot sauce for sandwiches

Instructions

  • Combine all salad ingredients in a food processor and process til ingredients are combined, but still chunky.
  • Serve as a side salad, or use to make sandwiches
