Chickpea Avocado Salad Sandwich
This recipe is for the salad. Serve it in pocket pitas with cucumbers, radishes, spinach and bean sprouts.
Chickpea Avocado Salad Sandwich

Ingredients
- 38 oz chickpeas 2 19oz cans, drained and rinsed
- 1 large avocado ripe, seeded, peeled
- 1/4 cup parsley chopped, fresh
- 1/4 cup lime juice
- 2 tbsp vegan mayo regular is fine too
- 2 tbsp dijon mustard
- 2 tsp garlic crushed
- 1 tsp hot sauce your choice, optional
- pumpernickel rye for sandwiches
- cucumber sliced, for sandwiches
- radish sliced, for sandwiches
- Bean sprouts for sandwiches
- spinach for sandwiches
- hot sauce for sandwiches
Instructions
- Combine all salad ingredients in a food processor and process til ingredients are combined, but still chunky.
- Serve as a side salad, or use to make sandwiches
