Chicken Satay and Sriracha Peanut Sauce

I wanted to do something with chicken thighs. But my local butcher was out and I was hungry so I caved and bought breasts instead. You can marinade these, but ain’t nobody got time fo dat! If you don’t mind the sugar in the peanut butter or even better, you’ve found a peanut butter without sugar then this is slow carb friendly.

Ingredients

  • 4 tbsps peanut butter creamy
  • 1/3 cup soy sauce
  • 1/2 cup lemon juice
  • 1 tbsp lemon juice
  • 1/2 tbsp soy sauce
  • 2 tbsps curry powder
  • 1 tbsp chopped garlic
  • 1 lb chicken breast or thighs , cut into cubes 1/5 u2033
  • 2 - 3 tbsps sriracha sauce
  • 1/2 tbsp olive peanut oil or
  • bamboo skewers

Instructions

  • Heat a grill pan, or bbq
  • In a large bowl mix 2 tbsp peanut butter, 1/3 cup soy sauce, 1/2 cup lemon juice, curry powder, garlic. Whisk until smooth.
  • Add chicken to marinade and let sit as long as you want.
  • Grill skewers 2-3 minutes per side
  • Peanut Sauce: In a small bowl use a small spoon to mix together 2tbsp peanut butter, 1tbsp lemon juice, 1/2 tbsp soy sauce, sriracha sauce, oil. Mix until thoroughly combined.
