Been sick the last few days, so I made chicken soup … and put bacon in it.
Chicken, Bacon & Rice Soup
Been sick the last few days, so I made chicken soup … and put bacon in it.
Servings: 5 serving
Ingredients
- 1 tbsp olive oil
- 1 onion medium , chopped
- 2 tbsps chopped garlic
- 2 carrot medium , chopped
- 3 celery ribs , chopped
- 1 tbsp thyme
- 1 bay leaf
- 2 chicken broth L
- 1 cup water
- 1 cup rice
- 1 1/2 cups chicken shredded
- 1/2 lb bacon
- salt and pepper /
Instructions
- In a separate pot of water, boil chicken breasts til cooked, about 7 mins
- In your soup pot, heat the olive oil, then add the vegetables, garlic and thyme and saute on medium-high til carrots soften, 7-8 mins
- While vegetables are cooking, cook bacon in a separate pan. Cut into 1-2u2033 strips.
- Add stock and water, then bring to a boil
- Add chicken, bacon and rice, reduce heat and simmer, covered 30 minutes, stirring occasionally.
