Chicken Afritada
Bone in, skin on is on sale at Metro. Hence these past 2 chicken leg dishes. Still have one more leg to go!
Servings: 3 serving
Ingredients
- 3 chicken leg bone in , skin on
 - salt and pepper and
 - 1 tbsp chopped garlic
 - 1 8 onion medium , chopped vertically into parts
 - 1 8 oz tomato crushed cans
 - 1 cup chicken broth
 - 1 tbsp fish sauce
 - 2 bay leaf
 - 2 cups mushroom whole
 - 1 red pepper small , sliced
 
Instructions
- Season chicken both sides with salt and pepper then sear in oil to golden brown in large pan- 5 minutes, remove legs and set aside
 - Add mushrooms, garlic, onions salt and pepper and saute til onions start to become translucent
 - return chicken to pan, add tomato sauce, chicken stock, fish sauce, bay leaves
 - Bring to light simmer and cook, covered for 30 minutes, stirring occasionally.
 - Add red pepper slices and cook another 10 minutes.
