Cheesy Smoked Sausage and Veggies on Quinoa

Ingredients

  • 13 oz smoked sausage sliced
  • 1 small white onion diced
  • 1/2 large red onion chopped
  • 2 cups broccoli florets
  • 1/2 cup quinoa uncooked
  • 1 cube chicken bouillon
  • 2 1/2 cups water
  • 1 tsp garlic salt
  • 1 tsp onion powder
  • 1/4 tsp pepper
  • 2 tbsp lemon juice
  • 1 cup cheddar cheese shredded
  • olive oil for frying

Instructions

  • Bring 2 cups of water to a boil, add the quinoa and bouillon, cover and simmer for 15-20 minutes or package instructions. When it's cooked drain it and set aside
  • Heat oil in a large pan, once sizzling add the sausage and fry for 5-8 minutes until the sausage begins to brown.
  • Add the white onion and continue to saute another 3-5 minutes, stirring occasionally.
  • Add the red onion and broccoli to the pan, sprinkle over the spices, then add the water and stir to combine. Bring to a boil, reduce to medium and cover for 5 minutes.
  • Remove the pan from the heat, sprinkle in the cheese and stir til fully melted in. Stir in the quinoa, taste and adjust seasoning with lemon juice and pepper.
