Cheesy Smoked Sausage and Veggies on Quinoa

Ingredients
- 13 oz smoked sausage sliced
- 1 small white onion diced
- 1/2 large red onion chopped
- 2 cups broccoli florets
- 1/2 cup quinoa uncooked
- 1 cube chicken bouillon
- 2 1/2 cups water
- 1 tsp garlic salt
- 1 tsp onion powder
- 1/4 tsp pepper
- 2 tbsp lemon juice
- 1 cup cheddar cheese shredded
- olive oil for frying
Instructions
- Bring 2 cups of water to a boil, add the quinoa and bouillon, cover and simmer for 15-20 minutes or package instructions. When it’s cooked drain it and set aside
- Heat oil in a large pan, once sizzling add the sausage and fry for 5-8 minutes until the sausage begins to brown.
- Add the white onion and continue to saute another 3-5 minutes, stirring occasionally.
- Add the red onion and broccoli to the pan, sprinkle over the spices, then add the water and stir to combine. Bring to a boil, reduce to medium and cover for 5 minutes.
- Remove the pan from the heat, sprinkle in the cheese and stir til fully melted in. Stir in the quinoa, taste and adjust seasoning with lemon juice and pepper.
