Ingredients

  • 4 apricots pitted and diced
  • 1/2 onion small diced
  • 2 tsps chopped garlic
  • 1 tbsp olive oil
  • 2 tsps balsamic vinegar
  • 1/4 cup parsley fresh , chopped
  • 100 g goat cheese herbed crumbled
  • 1 bread italian stick

Instructions

  • Mix together everything in a medium mixing bowl. Slice bread stick diagonally into 1″ thick slices.
  • Place slices on a baking sheet, drizzle with olive oil and place in broiler for 1-3 minutes to toast.
  • spoon apricot mixture onto bread slices and serve.
