Apricot and Goat Cheese Crostino
Apricot and Goat Cheese Crostino Recipe by Raymond Selzer
Servings: 20 serving
Ingredients
- 4 apricots pitted and diced
- 1/2 onion small diced
- 2 tsps chopped garlic
- 1 tbsp olive oil
- 2 tsps balsamic vinegar
- 1/4 cup parsley fresh , chopped
- 100 g goat cheese herbed crumbled
- 1 bread italian stick
Instructions
- Mix together everything in a medium mixing bowl. Slice bread stick diagonally into 1″ thick slices.
- Place slices on a baking sheet, drizzle with olive oil and place in broiler for 1-3 minutes to toast.
- spoon apricot mixture onto bread slices and serve.
