Ingredients

  • 1/4 cup bread crumbs
  • 1/2 lb ground pork regular
  • 2 sausage sweet italian , casing removed
  • 1 egg
  • 2 tsp Italian Seasoning
  • olive oil
  • 1 onion large chopped
  • 1 red pepper chopped
  • 1/2 lb white mushrooms whole , de - stemmed and quartered
  • 1/2 lb yukon gold potato baby , halved
  • 1/4 lb green beans , trimmed
  • 1 28 oz tomato diced , drained cans
  • 1/4 tsp red pepper crush
  • salt and pepper /
  • 1 1/2 cups chicken broth
  • 1/4 cup red wine tart, I used a Baco Noir

Instructions

  • Lightly mix together meats, breadcrumbs, egg, parsley, salt and pepper. Form into 6 large meatballs
  • Heat some olive oil on high in a large pan, fry meatballs, 2 mins per side then remove to a plate
  • Reduce heat to medium-high, Add onions and red peppers, salt and pepper to pan. Saute, stirring occasionally til soft. Roughly 5 mins.
  • Add mushrooms, more salt and pepper and saute til soft- another 5mins.
  • use red wine to deglaze pan
  • add potatoes, tomatoes, chicken broth. Turn heat back to high and bring to a boil, stirring occasionally
  • Reduce to simmer, add meatballs back in, making sure they are partially submerged.
  • Cover and cook til potatoes are soft, roughly 20 mins. Remove cover and simmer another 5 mins to reduce liquid.
