Heat a large skillet on high til almost smoking
While the pan heats, form the meat into a loose ball
When the pan is ready, add the butter and move around to fully melt, add the meat ball, season with salt and smash, cook for 1 minute, flip and brush with mustard and cook another 30 seconds. Remove from the pan and set aside.
Turn the heat down to medium high, add the smoked meat to the pan in a pile about the size of the bun. Top with the cheese, squirt a little water in the pan and cover for 30-60 seconds until cheese is fully melted. Remove from pan and set aside
Toast the buns in the pan for 30-60 seconds
Build the burger: onions, slaw, patty, meat / cheese, special sauce, top. Cut the burger in half and serve with more mustard on the side.
