Ingredients

The Halloumi

  • 250 g halloumi cheese sliced width-wise 1/4" thick
  • 3 tbsp harissa recipe above

The Veg

  • 1 large zucchini chopped 1/4" thick
  • 1 large red pepper chopped into 2" squares
  • 1/2 large red onion chopped into half wedges
  • 250 g mushrooms sliced
  • 1 1/2 tbsp olive oil
  • 2 tsp paprika

The Rest

  • 1 cup hummus
  • 1 bunch baby spinach washed
  • 4 pocket pita
  • salt and pepper to taste

Instructions

The Veg

  • Preheat oven to 425F
  • Toss everything together in a large mixing bowl to fully coat veg in oil and paprika, spread on a baking sheet and roast 25 minutes, flipping half way

The Halloumi

  • Grill the halloumi in a grill pan on medium, 2-3 minutes per side or until browned

The Wrap

  • Heat a pita to soften, then spread in hummus and harissa, add spinach and stuff with veg and cheese
