sliced width-wise 1/4" thick

Instructions
The Veg
Preheat oven to 425F
Toss everything together in a large mixing bowl to fully coat veg in oil and paprika, spread on a baking sheet and roast 25 minutes, flipping half way
The Halloumi
Grill the halloumi in a grill pan on medium, 2-3 minutes per side or until browned
The Wrap
Heat a pita to soften, then spread in hummus and harissa, add spinach and stuff with veg and cheese
