preheat oven to 400F
Place potatoes, onions and peppers in a large mixing bowl and toss with olive oil til fully coated. Add Italian seasoning and continue tossing til evenly coated.
Mix in sausage slices and toss again.
Transfer to a large glass baking dish. Cover with tin foil, poke holes in the tin foil for steam. Roast on the bottom shelf of the oven for 40-50 minutes or until potatoes are soft.
