Ingredients

  • 4 - 5 sausage links spicy Italian , cut diagonally
  • 1 " 4 - 5 potatoes medium , cut into cubes
  • 1/2 - 1 cup banana pepper drained rings
  • 2 yellow onions , sliced
  • olive oil
  • salt
  • pepper
  • 3 tbsps italian seasoning

Instructions

  • preheat oven to 400F
  • Place potatoes, onions and peppers in a large mixing bowl and toss with olive oil til fully coated. Add Italian seasoning and continue tossing til evenly coated.
  • Mix in sausage slices and toss again.
  • Transfer to a large glass baking dish. Cover with tin foil, poke holes in the tin foil for steam. Roast on the bottom shelf of the oven for 40-50 minutes or until potatoes are soft.
