Heat oil in a large pan on medium high until shimmering. Add the kielbasa and fry for 4-5 minutes until all slices are deeply browned
Add the onions and garlic and continue to fry, tossing occasionally for another 2-3 minutes until fragrant and the onions are soft and translucent.
Add the Italian seasoning and stir for 1-2 minutes until fragrant.
Turn the heat to high and add the white wine and scrape up the fond with a flat wood spoon, then add the broth, rice and vegetables.
Keep the heat on high until the liquid hits a full boil, cover, reduce to a simmer and cook covered for 8 minutes
Uncover the pan and continue to simmer for another 3-4 minutes until the liquid reduces significantly.
