Spicy Chicken Wrap
Servings: 6 wraps
Ingredients
The Wraps
- 3 large chicken breast boneless, skinless. Chopped into 1-2" pieces
- 1/4 cup olive oil
- 1 tbsp lemon juice
- 2 tsp chopped garlic
- 1 tbsp lemon juice
- 1 tsp salt
- 1/2 tsp pepper
- 1/2 tsp dried oregano
- 1/2 tsp cumin
- 1/4 tsp coriander
- 1/4 tsp paprika
- 6 10" tortilla
- 3 roma tomato sliced and halved
- 6 cups baby spinach
- 3 cups shredded cheddar
- 1/2 large red onion sliced
The Sauce
- 1/2 cup mayonnaise
- 1/2 cup greek yogurt
- 3 tsp chopped garlic
- 1 tbsp tahini
- 1-2 tbsp sriracha
- 1 tsp salt
- 1 tsp pepper
- 1/2 tsp lemon juice
Instructions
The Wraps
- Place all the chicken in a ziplock bag, add the oil, spices, lemon juice and zest. Close the bag and press out the air, Then rub the chicken to coat thoroughly with the marinade. Marinade for 2 hours
- Heat a large pan on medium high, add the chicken with marinade and cook to desired doneness - about 8 minutes. Remove the chicken from the heat, cover and allow to rest for as long as it cooked.
- Build the wraps with the fresh ingredients, open on one end.
The Sauce
- Whisk together all ingredients til combined, transfer to a sauce bottle or covered container.
