Slow Carb Shepherd’s Pie
Wanted Shepherd’s pie, had all the ingredients plus I had to use the cauliflower head in my fridge. It was meant to be

Ingredients
- 1 cauliflower large head
- 4 tbsps butter /
- salt and pepper and
- 1 kg ground beef
- 1 onion large , chopped
- 1 1/2 tbsps thyme leaves
- 1 1/2 tbsps marjoram
- 1 tsp rosemary
- 3/4 cup beef broth
- 1/4 cup sherry cooking
- 1 1/2 tbsps chopped garlic
Instructions
- preheat oven to 400F
- Chop up the cauliflower and steam it for 20 minutes until quite soft
- Slowly add the cauliflower pieces to the food processor with margarine, and salt. Process, checking occasionally until theyu2019re the consistency you want. (You can mash them with a fork too if you steamed them long enough)
- Simmer the meat til brown
- Add onion and garlic to meat and continue to simmer another 5 minutes or so
- add the veggies and cook another 5 minutes or so
- stir in the broth, sherry, rosemary, thyme and marjoram
- simmer on medium high until liquid reduces by half
- put the meat in a 9u2033 baking dish and cover with mashed cauliflower
- bake in oven for 30 minutes
