Slow Carb Polish Breakfast

So on top of Slow Carb diet, I’ve also been Intermittent Fasting which means I only eat between 1130am and 730pm. So I come home from hockey at 11pm and go on reddit and some jerk has posted these pictures of breakfasts from around the world. The Polish one made my mouth water, but I couldn’t have the sour cream or the latkes, so I substituted cottage cheese and made lentil pancakes. I used Italian sausage this time because I had some in the fridge, but definitely go with kielbasa if you can.

Ingredients

  • 1 kielbasa or Italian sliced diagonally
  • 5 egg
  • 1 green onion bundle or , chopped
  • 3 u2013 4 tbsps cottage cheese
  • 270 ml lentils
  • 1 tbsp chopped garlic
  • 1 tsp red pepper flakes
  • 1 tbsp ginger minced fresh
  • 1 1/2 tbsps masala gara
  • salt
  • pepper

Instructions

  • Fry the sausage how you like
  • Scramble 3 eggs how you like (I did salt, pepper and half the scallions)
  • Add the lentils and 1/2 a cup of water to a food processor and blend into a batter, transfer to a mixing bowl
  • Add 2 eggs, garlic, pepper flakes, ginger, gara masala, salt and pepper, remaining scallions and whisk to combine
  • Make them exactly like you would pancakes, they can break apart pretty easily so keep that in mind when flipping.
