  • 1 cup basmati rice dry
  • 1/2 tsp powdered saffron
  • 1/4 cup hot water
  • 2 tbsp olive oil
  • 3 cups chicken broth or vegetable stock
  • sumac for garnish
  • 1 medium onion chopped fine
  • butter


  • Heat a sauce pan on medium and saute the onions in the butter until soft- about 3 minutes
  • In a small bowl whisk together the saffron and warm water
  • Add the dry rice to the pan, pour in the saffron water and stir to combine
  • Add the chicken stock, stir again and bring to a boil
  • reduce heat to low, cover and simmer for 10 minutes
  • Serve rice garnished liberally with sumac
