Ingredients
- 1 eggplant , sliced into 1/4u2033 slices
- 5 egg , hard boiled
- 1/2 english cucumber , diced
- 2 tomato roma , diced
- 1 onion medium , diced
- 2 Dill pickle diced
- hot sauce
- 1 1/2 tbsps lemon juice
- salt
- pepper
- 1 540 ml chickpeas , drained cans
- 1/4 cup lemon juice
- 1/4 cup tahini
- 2 tbsps chopped garlic
- 1 tsp salt
- 1 tbsp cumin
- 3 tbsps olive oil
- 1 u2013 2 tbsps water
Instructions
- add tahini and lemon juice to a food processor and process for 1 minute
- add oil, garlic cumin and salt, process for 1 minute
- add 1/3 of the chickpeas into the processor while itu2019s running and process for 1 minute, repeat for other 2/3
- process non stop for 2-3 minutes. Taste the hummus, adjust seasoning as necessary. If itu2019s too thick add the water and process some more
- Heat olive oil in a pan on medium-high
- Salt both sides of an eggplant slice and cook in the pan, 4 minutes per side
- In a large bowl mix together cucumber, tomato and pickles. Season with lemon juice, salt and pepper to taste.
- Peel and slice a boiled egg into 3 pieces.
- Build the sabich. Season to taste with hot sauce. Fold and eat!
