Roasted Cauliflower and Chorizo Breakfast Hash

Ingredients

  • 4 large eggs fried (optional)
  • 3/4 head culiflower chopped
  • 3 links chorizo, cured chopped
  • 2 green peppers chopped
  • 1 large red onion
  • 1-2 tbsp perri perri powder
  • 1/2 cup green onion for garnish
  • 2 tbsp olive oil
  • 2 tbsp chopped garlic

Instructions

  • preheat oven to 400F
  • Place sausage and vegetables in a large mixing bowl, toss with oil, garlic and perri perri powder to coat evenly
  • place everything in a glass 13x9 baking dish, cover with tin foil and poke holes in the foil
  • Roast at 400F for 50 minutes
  • Fry eggs sunny side up with a soft yolk, serve hash topped with egg and garnished with green onion
