Roasted Cauliflower and Chorizo Breakfast Hash
Servings: 4 servings
Ingredients
- 4 large egg fried (optional)
- 3/4 head cauliflower chopped
- 3 links chorizo, cured chopped
- 2 green pepper chopped
- 1 large red onion
- 1-2 tbsp perri perri powder
- 1/2 cup green onion for garnish
- 2 tbsp olive oil
- 2 tbsp chopped garlic
Instructions
- preheat oven to 400F
- Place sausage and vegetables in a large mixing bowl, toss with oil, garlic and perri perri powder to coat evenly
- place everything in a glass 13x9 baking dish, cover with tin foil and poke holes in the foil
- Roast at 400F for 50 minutes
- Fry eggs sunny side up with a soft yolk, serve hash topped with egg and garnished with green onion
