Pumpkin Spice Linguine
Tis' the season!
Servings: 3 serving
Ingredients
- 1 cup pumpkin pure
- 1 onion small , diced
- 1 cup beef broth
- 1 tbsp garlic chopped
- 1 tbsp red pepper flakes
- 1 tsp nutmeg
- 2 tbsps butter
- 1 cup cream
- linguine cooked almost al dente
- salt
- pepper
Instructions
- In a large pan, melt butter on medium high heat.
- add onions and garlic to pan, season with salt and saute til onions soften, 3-5 minutes
- Add pure, broth and cream. Season with salt, pepper, red pepper flakes and nutmeg. Bring to a boil then let simmer 8-10 minutes
- stir drained linguine into sauce, then serve.
