Pork Souvlaki Dinner

Servings: 4 serving
Ingredients
- 2 lbs pork loin cut into cubes 1-2″
For the potatoes
- 4 quartered potatoes yellow ,
- 2 tbsps chopped garlic
- 1 tsp rosemary
- 1 tsp thyme
- 1 1/2 cups chicken broth
- 1/3 cup olive oil
- 1/4 cup lemon juice
- pepper
For The Salad
- green leaf lettuce
- 1 tomato roma , sliced
- 1/2 yellow onion , sliced thin
- black olives
- feta cheese
Instructions
- Preheat oven to 350F
- Place potatoes in a 9×13 baking dish.
- Combine all liquid ingredients then pour over potatoes.
- Cover dish with tin foil and poke holes for steam
- Roast at 350F for 2 hours.
- Start cooking the meat and riceat about the 90 minute mark to have everything ready at the same time.
- Toss the salad ingredients in a salad bowl
- Build a plate of salad, rice, souvlaki and potatoes. Liberally cover everything with tzatziki, feta and left over potato juices.
