Oven-roasted Sausages, Potatoes, and Peppers
Oven-roasted Sausages, Potatoes, and Peppers Recipe by Raymond Selzer

Ingredients
- 4 - 5 sausage links spicy Italian , cut diagonally
- 1 " 4 - 5 potatoes medium , cut into cubes
- 1/2 - 1 cup banana pepper drained rings
- 2 yellow onion , sliced
- olive oil
- salt
- pepper
- 3 tbsps italian seasoning
Instructions
- preheat oven to 400F
- Place potatoes, onions and peppers in a large mixing bowl and toss with olive oil til fully coated. Add Italian seasoning and continue tossing til evenly coated.
- Mix in sausage slices and toss again.
- Transfer to a large glass baking dish. Cover with tin foil, poke holes in the tin foil for steam. Roast on the bottom shelf of the oven for 40-50 minutes or until potatoes are soft.
