One Pot cabbage and beef
Servings: 6 serving
Ingredients
- 1 lb ground beef
- 1/2 cabbage head , chopped
- 1 28 oz can tomato diced
- 2 onion medium , chopped
- 2 tbsps chopped garlic
- salt
- pepper
- 300 g rigatoni dry , cooked to al dente and drained
Instructions
- Brown the meat on medium-high in a large pot. Season with salt and pepper. 8-10 minutes.
- Using a slotted spoon, remove the meat from the pan and set aside. Drain the pan of most of the grease, but not all.
- Add the onions and garlic and saute for 2-3 minutes til onions soften.
- Add the cabbage to the pot and season with salt. Saute for 5-8 minutes, stirring frequently.
- Add the tomatoes with juice, stir to combine and bring to a boil, then reduce heat to medium. Cook until tomato juice is mostly gone, 5-8 minutes.
- Stir in the meat, cover and simmer another 5 minutes.
- Add drained pasta to the pot, toss to combine.
Notes
This can be made with any short, hollow noodle. I had rigatoni on hand, but next time would probably make it with macaroni. Shells would work here too.
