Ingredients

The Cake

  • 2/3 cup Monk Fruit Sweetener or other low carb sweetener
  • 1/2 cup butter unsalted
  • 5 large egg
  • 1/3 cup almond milk unsweetened, or soy unsweetened
  • 1 tbsp vanilla extract
  • 2 cup almond flour
  • 1/3 cup coconut flour
  • 2/3 tbsp baking powder
  • 100 g blackberries

The Frosting

  • 500 g cream cheese plain, room temp
  • 3 tbsp butter unsalted
  • 6 tbsp Powdered Monk Fruit Sweetener
  • 1 tsp vanilla extract

Instructions

The Cake

  • preheat oven to 350F
  • beat together butter and sugar until fluffy
  • Slowly beat in 1 egg at a time into the sugar and butter
  • beat in the milk and vanilla
  • sift the flours and baking soda together in a separate bowl, then slowly beat into the batter mix
  • Pour the batter into 2 shallow, greased 9" cake pans and bake on the middle rack for 20-26 minutes or until golden, no longer shiny, and a toothpick inserted comes out clean
  • Once cooked, allow to rest in the pan, then remove to wire rack to cool to room temperature

Frosting and Building

  • Whisk together all frosting ingredients in a medium mixing bowl
  • Spread or pipe the icing onto one cake, spread 1/3 of the blackberries evenly around
  • Add the top layer, spread or pipe the remaining icing and decorate with remaining blackberries
