Moroccan Sweet Potato and Lentil Soup

Ingredients

  • 3 tbsp olive oil
  • 2 medium onion
  • 1 large carrot
  • 1 tbsp chopped garlic
  • 2 tsp zested ginger
  • 2 tsp cumin
  • 1 tsp coriander
  • 1 tsp curry powder or turmeric. The curry powder should just be the regular old "curry powder" from the spice aisle, not any blend in particular
  • 1 tsp paprika
  • 1 tsp ground cinnamon
  • 6 cups vegetable broth
  • 28oz diced tomatoes canned, with juices
  • 1 large sweet potato peeled, diced
  • 1 cup lentils green or brown, dry
  • 1 tsp salt
  • 1 tsp pepper
  • 1-2 tbsp lemon juice
  • 1/2 cup cilantro, fresh chopped, plus more for garnish

Instructions

  • Combine the spices in a small bowl and mix evenly with a fork
  • Heat the olive oil in a large soup pot on medium heat. Add the carrots and onions and saute 3-5 minutes til onions are soft and fragrant
  • stir in the garlic and ginger and continue to saute another 1-2 minutes
  • Stir in the spice mix and saute another 1-2 minutes til fragrant
  • Stir in broth, tomatoes, potatoes, lentils and cilantro. Turn the heat to high, bring to a boil then reduce to medium-low, cover and simmer 30 minutes until potatoes are fork tender. Serve garnished with more cilantro.
