Moroccan Sweet Potato and Lentil Soup
Servings: 10 cups
Ingredients
- 3 tbsp olive oil
- 2 medium onion
- 1 large carrot
- 1 tbsp chopped garlic
- 2 tsp zested ginger
- 2 tsp cumin
- 1 tsp coriander
- 1 tsp curry powder or turmeric. The curry powder should just be the regular old "curry powder" from the spice aisle, not any blend in particular
- 1 tsp paprika
- 1 tsp ground cinnamon
- 6 cups vegetable broth
- 28oz diced tomatoes canned, with juices
- 1 large sweet potato peeled, diced
- 1 cup lentils green or brown, dry
- 1 tsp salt
- 1 tsp pepper
- 1-2 tbsp lemon juice
- 1/2 cup cilantro, fresh chopped, plus more for garnish
Instructions
- Combine the spices in a small bowl and mix evenly with a fork
- Heat the olive oil in a large soup pot on medium heat. Add the carrots and onions and saute 3-5 minutes til onions are soft and fragrant
- stir in the garlic and ginger and continue to saute another 1-2 minutes
- Stir in the spice mix and saute another 1-2 minutes til fragrant
- Stir in broth, tomatoes, potatoes, lentils and cilantro. Turn the heat to high, bring to a boil then reduce to medium-low, cover and simmer 30 minutes until potatoes are fork tender. Serve garnished with more cilantro.
