Moroccan Quinoa and Chickpea Salad

Ingredients

The Salad

  • 1/2 cup quinoa uncooked
  • 1 medium carrot cut into match sticks
  • 1/2 cup green onion chopped
  • 1/2 cup white or red onion diced
  • 19 oz chickpeas can, drained
  • 1/2 cup golden raisins
  • 1/4 cup pistachios
  • 1/2 cup cilantro chopped

The Dressing

  • 1/2 tsp cumin
  • 1/3 cup olive oil
  • 2 tbsp lemon juice
  • 1 tbsp brown sugar
  • 1/2 tsp salt
  • 1/4 tsp chilli or berbere powder

Instructions

  • Cook the quinoa to package directions, drain and cool
  • Combine all salad ingredient and toss.
  • Combine all dressing ingredients in a separate bowl, drizzle over salad and toss to coat evenly
