Moroccan Quinoa and Chickpea Salad

Ingredients
The Salad
- 1/2 cup quinoa uncooked
- 1 medium carrot cut into match sticks
- 1/2 cup green onion chopped
- 1/2 cup onion white or red, diced
- 19 oz chickpeas can, drained
- 1/2 cup golden raisins
- 1/4 cup pistachios
- 1/2 cup cilantro chopped
The Dressing
- 1/2 tsp cumin
- 1/3 cup olive oil
- 2 tbsp lemon juice
- 1 tbsp brown sugar
- 1/2 tsp salt
- 1/4 tsp chili powder
Instructions
- Cook the quinoa to package directions, drain and cool
- Combine all salad ingredient and toss.
- Combine all dressing ingredients in a separate bowl, drizzle over salad and toss to coat evenly
