Because I swapped the rice for lentils, this recipe makes more of a soup / stew. So don’t try to flip it upside down in the pot

Ingredients

  • 1 onion small , chopped
  • 6 chicken thighs
  • 1 tsp paprika
  • 1 tsp turmeric
  • 1 tsp curry powder
  • 1/2 tsp salt
  • 1 eggplant small
  • 1 cauliflower small head , cut into florets
  • 1 can lentils
  • 2 cups chicken broth
  • 1/2 can chickpeas
  • 2 tbsps cilantro chpoped fresh
  • greek yogurt

Instructions

  • In a skillet saute the onions in olive oil til soft
  • Add chicken, spices and cilantro to the pan and brown
  • Once the chicken is browned add the chicken and onions to a large pot
  • In the skillet fry the eggplant then the cauliflower, add both to the pot when fried
  • Cover everything with the lentils and chickpeas and add the broth.
  • Bring it to a boil, then turn to low, cover and simmer for 40 minutes
  • serve with greek yogurt
