Because I swapped the rice for lentils, this recipe makes more of a soup / stew. So don’t try to flip it upside down in the pot
Servings: 6 serving
Ingredients
- 1 onion small , chopped
- 6 chicken thighs
- 1 tsp paprika
- 1 tsp turmeric
- 1 tsp curry powder
- 1/2 tsp salt
- 1 eggplant small
- 1 cauliflower small head , cut into florets
- 1 can lentils
- 2 cups chicken broth
- 1/2 can chickpeas
- 2 tbsps cilantro chpoped fresh
- greek yogurt
Instructions
- In a skillet saute the onions in olive oil til soft
- Add chicken, spices and cilantro to the pan and brown
- Once the chicken is browned add the chicken and onions to a large pot
- In the skillet fry the eggplant then the cauliflower, add both to the pot when fried
- Cover everything with the lentils and chickpeas and add the broth.
- Bring it to a boil, then turn to low, cover and simmer for 40 minutes
- serve with greek yogurt
