Italian Sausages with Sautéed Sriracha Veggies
I was craving a ballpark style sausage loaded down with peppers and onions. Figured I'd spice things up with a little sriracha too.

Ingredients
- 1 cup sauerkraut , drained , room temperature
- 1 pepper large , green diced
- 1 red pepper large , diced
- 2 yellow onion medium , sliced
- 3 button mushrooms large , diced
- 2 tbsps chopped garlic
- 6 sausage spicy italian
- 6 sausage buns large
- 2 tbsps sriracha
- salt
- mustard for topping
- butter
Instructions
- heat oil in a medium skillet. Add all vegetables and garlic except sauerkraut. Season liberally with salt and mix in sriracha sauce. Sautxe9e on medium til onions are translucent and other vegetables are soft- 5-8 minutes.
- In another skillet cook sausages to desired doneness.
- Butter sausage buns and toast in sausage pan after sausages are cooked.
- Mix vegetables and sauerkraut together in a large mixing bowl.
- Serve sausages topped with vegetables and mustard.
