Fried Chicken in Tomato Bacon Sauce
I have a bunch of boneless skinless chicken on hand, I like bacon, this was a no brainer
Servings: 3 serving
Ingredients
- 4 tbsps butter
- 2 tbsps olive oil
- 2 - 4 chicken breast boneless skinless
- 1 onion large , diced
- 2 tbsps chopped garlic
- 2 celery stalks
- 4 strips bacon diced ,
- 14 - 20 oz tomato canned diced
- 2 tbsps tomato paste
- 1/2 cup water
- tbsp basil
- salt and pepper and
Instructions
- In a large pan, melt 2 tbsp butter, add onion, garlic, celery and bacon. Cook on low for 5 minutes until softened
- Stir in tomatoes and tomato paste, add salt, pepper and sugar to taste.
- Add water and bring to a boil then reduce to simmer. Simmer for 15-20 min to reduce.
- Coat chicken breasts with salt and pepper.
- In a separate pan, brown on all sides the chicken breasts in 2 tbsp butter and the olive oil
- Add chicken to sauce, spoon sauce over chicken. Cover pan and simmer 10-15 mins until chicken is done
- Garnish with fresh chopped parsley
