Easy Weeknight Zesty Garlic Parmesan Veggies

If you’ve got something against frozen veg, just do same weight of fresh green beans, ends removed

  • 200 g Frozen Vegetables, Mixed beans and carrots "garden"
  • 2 tbsp butter
  • 2 clove garlic crushed
  • salt and pepper
  • 1/4 cup parmesan grated
  • 1 lemon zested


  • In a large pan steam the veggies until soft- about 3-5 minutes
  • Empty and dry the pan, setting the veggies aside.
  • melt button in the pan on medium heat, add garlic and simmer until fragrant- 2-3 minutes
  • Add the drained veggies back to the pan, toss to coat, season with salt and pepper and saute 2-3 minutes
  • Move veggies to a bowl with all the butter and garlic from the pan, toss with parmesan
  • Toss again with lemon zest to taste right before serving
