Coq Au Vin in White Wine Sauce

Servings: 2 serving
Ingredients
- 2 chicken leg skin on , bone in
- , 8 cloves garlic peeled and halved u2013 10
- 3 celery ribs , chopped
- 1 shallot , finely chopped
- 1 cup white wine, dry (I used Louis Latour Chardonnay)
- 1 cup water
- 2 tbsps olive oil
- 1/4 cup parsley chopped
Instructions
- Sear the chicken in the olive oil until golden brown. Remove and set aside.
- Add the garlic and celery to the pan and saute until garlic is browned and celery begins to soften
- Add the wine and shalot and simmer until reduced to half, then add the water and bring back to simmer
- Re-add the chicken and cook partially covered for 20-25 minutes.
