Coddle and Soda Bread

Ingredients
The Coddle
- 6 large potatoes peeled and chopped into 1" pieces
- 3 large onion chopped
- 1 lb sausage chopped into 1" pieces
- 3 large carrot chopped
- 1 lb bacon cut into 1" slices
- 500 ml beef broth
- 1 1/2 cups parsley fresh chopped
- 3 tsp pepper
The Bread
- 4 cups all purpose flour
- 2 cups buttermilk
- 1 tsp salt
- 1 tsp baking soda
- butter
Instructions
The Coddle
- fry the sausages and bacon until just browned- 5 minutes for the sausage, 8-10 minutes for the bacon
- In a slowcooker layer the ingredients- 1 onion, 1 carrot, 2 potatoes, 1/3 bacon, 1/3 sausages, 1/2 cup parsley, 1 tsp pepper. Repeat 3 times and then pour in beef broth.
- Slow cook on high for 3 hours.
The Bread
- Preheat the oven to 425F
- In a large mixing bowl combine all dry ingredients.
- Slowly stir in the buttermilk then knead til a ball is formed.
- Form an 8" dough ball by folding the dough's edges under itself.
- Bake the dough on a greased baking sheet at 425F for 45 minutes, Serve spread with butter.
