Chicken and Zucchini Noodles in Vodka Cream Sauce

Ingredients
- 4 zucchini
- oil
- 1 lb chicken breast cut into 1" pieces
- 1 tsp thyme
- 1 tbsp chopped garlic
Sauce
- 1 tbsp butter
- 2 tbsp chopped garlic
- 2 tbsp tomato paste
- 28oz can diced tomatoes drained
- 1/2 cup vodka
- 1 cup 2% milk
- 1/2 cup grated parmesan
Instructions
- Run the zucchini through your Spiralizer on the broadest setting. Squeeze the noodles in cheese cloth to drain, then set aside
- Heat oil on medium high in a large, deep pan. Once oil is hot add chicken, 1 tbsp garlic and thyme, season with salt and pepper. Sautee on medium high for 5-8 minutes til no longer pink. Use a slotted spoon to remove the chicken to a side bowl, leaving the juices
- Add the zucchini to the pan with salt. Sautee the zucchini on medium stirring frequently for 10-12 minutes til soft and reduced in size. Remove from the pan and set aside
- Melt the butter in the pan, add the 2 tbsp remaining garlic and tomato paste. Whisk to combine, then add in the diced tomatoes and stir to combine. Bring the sauce to a boil on high then reduce to medium and simmer covered for 10 minutes.
- Whisk in the vodka, bring the sauce back to a boil on high then reduce to medium and simmer partially covered for 10 minutes.
- Stir in the milk and simmer for 8-10 minutes uncovered. Stir in the parmesan, then add the chicken and continue to simmer uncovered another 5 minutes.
- fold in the noodles and simmer another 1-2 minutes. Serve with fresh chopped basil and more parmesan.
