Cheesy Vodka Chicken Sandwich

Ingredients
- 1 8-10" baguette halved horizontally
- 80 g salami sliced
- 1 chicken breast boneless, skinless, butterflied, hammered 1/4" thick
- 1 cup vodka sauce
- 8-10 leaves basil chiffoned
- 8-10 pepperoncini sliced
- 1 tbsp butter
- 4-5 slices Mozzarella, Fresh
- 1 egg
- 1/4 cup bread crumbs
- 2 tbsp flour
Instructions
- In a small bowl mix together the sliced peppers and basil
- pre heat your broiler
- lay the salami slices down on the heal of the baguette and butter the top. Place both cut side up on a baking tray
- whisk the egg, coat the chicken breast in the flour, dredge in the egg, then coat evenly with the bread crumbs
- heat oil on medium-high in a medium skillet, when shimmering add the chicken breasts and cook til breadcrumbs are golden brown 5-8 minutes.
- Turn the chicken breasts and add the vodka sauce to the pan. Move the breasts around to fully coat, then cover and simmer on medium for another 2-4 minutes
- lay the chicken breasts on the salami on the heel of the bread, top with any remaining sauce from the pan then lay the mozzarella slices on top
- Place the tray in the oven on the top shelf and broil until the cheese has fully melted and begins to brown.
- Remove the sandwich from the broiler, top liberally with basil and peppers, cut in half and serve
