Cheesy Penne and Chicken with Sun Dried Tomatoes
Cheesy Penne and Chicken with Sun Dried Tomatoes Recipe by Raymond Selzer
Servings: 3 serving
Ingredients
- 2 chicken breast boneless skinless, cut into bite sized pieces
- 6 tomato sun dried , chopped
- 1 1/2 tsps paprika
- 1 cup cream 10 %
- 1/2 cup basil chopped fresh
- 1/4 tsp red pepper flakes
- 1/2 cup pasta water reserved
- 1 1/2 tbsps chopped garlic
- 1 cup mozzarella shredded
- 2 tbsps parmesan grated (optional)
Instructions
- Cook the pasta til al dente. Drain and reserve 1/2 a cup of the water.
- In a large pot saute garlic in oil til fragrant, add chicken and season with salt, pepper and paprika. Cook til no longer pink.
- Add the tomatoes and continue to cook another 3-6 minutes, stirring occasionally.
- Add cream and cheese(s), stir til mozzarella melts completely. Taste and adjust seasoning with salt and pepper.
- Add drained pasta and 1/2 cup pasta water. Stir til pasta is fully coated. Stir in basil and red pepper flakes and serve.
Notes
the fresh basil makes a huge difference over dried!
