Cheesy Buffalo Turkey Zucchini Boats

Ingredients
- 3 large zucchini halved, seeds carved out
- 3/4 lb ground turkey
- 3/4 cup buffalo sauce I used Nandos
- 1 cup shredded mozarella
- 1/4 cup blue cheese crumbled
- 1/4 cup blue cheese dressing
- salt and pepper
- vegetable oil
Instructions
- preheat the oven to 400F
- heat oil in a large pan on medium-high, add turkey and season with salt and pepper. Cook til no longer pink, 5-8 minutes
- Add 1/2 cup buffalo sauce to the pan and stir to combine. Cook another 2-3 minutes til sauce is fully absorbed
- Place the zucchini in a 9/13 cooking dish, season with salt and pepper and fill the boats with the meat. Cover the dish with tin foil and bake for 20 minutes
- After 20 minutes take the zucchini out of the oven, add the mozzarella, recover and return to the over for another 15 minutes.
- Drizzle the boats with the remaining sauce, crumble on the blue cheese and drizzle on the blue cheese dressing and serve.
