Buffalo Chicken and Bacon Grilled Cheese Sandwich

  • 1 lb bacon
  • 2 medium chicken breast sliced into strips
  • 3-4 tbsp blue cheese crumbled
  • 1 1/2 cups cheddar cheese shredded
  • 6-8 slices bread thick sliced
  • 1 tsp paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 3 tbsp franks red hot sauce
  • 3 tbsp butter


  • Toss the chicken with the franks and the spices
  • Fry the bacon in a medium skillet, once cooked to desired doneness, set aside. Drain the pan of all but about 1tbsp of bacon grease
  • Add the butter to the pan and once melted add the chicken and cook til done- 5-8 minutes
  • Heat a pan on medium high
  • Butter the bread slices on one side. Add 2 pieces to the pan once hot, butter side down. Top one piece with chicken and cheddar and cover. Fry til cheese is melted and bread is browned, 2-3 minutes.
  • Remove bread from the pan, add blue cheese and bacon. Slice in half and serve
