Blue Cheese and Grilled Asian Pear Salad with Walnuts and Balsamic Dijon Dressing

Ingredients

For The Salad

  • 1/2 romaine lettuce (ribs and sturdier leaves), torn
  • 1/2 cup walnut halves
  • 1/2 asian pear , sliced thin
  • 2 ounces blue cheese , crumbled
  • 2 tbsps extra virgin olive oil

For The Dressing

  • 3 tbsps balsamic vinegar
  • 3 tbsps dijon mustard
  • black pepper
  • 6 tbsps extra virgin olive oil

Instructions

  • To make the dressing whisk together all the dressing ingredients in a small mixing bowl. Cover with saran wrap and refrigerate while you make everything else.
  • Heat a grill pan to high heat.
  • In a medium mixing bowl, toss the pear slices in 2 tbsp olive oil.
  • Grill the pear slices in the grill pan for about 1 minute per side or until the grill marks are very dark, but the pears aren't burnt. Grill the pears the in batches to achieve clean even grill marks.
  • Add all the salad ingredients to a large salad bowl, cover with the dressing, toss and serve.
