Blue Cheese and Grilled Asian Pear Salad with Walnuts and Balsamic Dijon Dressing

Ingredients
For The Salad
- 1/2 romaine lettuce (ribs and sturdier leaves), torn
- 1/2 cup walnut halves
- 1/2 asian pear , sliced thin
- 2 ounces blue cheese , crumbled
- 2 tbsps extra virgin olive oil
For The Dressing
- 3 tbsps balsamic vinegar
- 3 tbsps dijon mustard
- black pepper
- 6 tbsps extra virgin olive oil
Instructions
- To make the dressing whisk together all the dressing ingredients in a small mixing bowl. Cover with saran wrap and refrigerate while you make everything else.
- Heat a grill pan to high heat.
- In a medium mixing bowl, toss the pear slices in 2 tbsp olive oil.
- Grill the pear slices in the grill pan for about 1 minute per side or until the grill marks are very dark, but the pears aren’t burnt. Grill the pears the in batches to achieve clean even grill marks.
- Add all the salad ingredients to a large salad bowl, cover with the dressing, toss and serve.
