Ingredients

  • 2-3 large dill pickles sliced lengthwise
  • 1 tbsp dill pickles diced
  • 1 tbsp mayonnaise heaping tbsp
  • 1 tsp dijon mustard the grainier, the better
  • 1/2 tsp pickle brine
  • salt and pepper
  • 2 tsp dill chopped fine
  • 2-4 slices aged cheddar the older and bolder, the better
  • 2 slices rye bread or any flavourful rustic bread of your choice

Instructions

  • Whisk together the mayo, mustard, brine, dill and chopped pickle, season with salt and pepper and allow to refrigerate for at least 15 minutes
  • Spread the mayo evenly on every bread slice, lay the pickles and cheese, slice in half and serve with chips
